Zucchini Pasta with Saute Shrimp
You will feel so good about yourself after eating these zucchini pasta with sautés shrimp. We enjoy our pasta bowl, but with about 22 grams of carbohydrates in one serving, we don’t always want to go for it! Well, you can cut those carbs with this easy to make zucchini pasta. Sauter the noodles with shrimps and serve them with homemade fresh tomatoes sauce and you might just forget about your real pasta bowl… 😉 just for a moment! Zucchini is a great pasta substitute as it does not really have a taste to itself. It takes any flavor you gives to it. In this recipe, I use a spiralizer, veggie bullet, to make the zucchini noodle, which you can get at the store or use any vegetable spiralizer you have. You can also cut the zucchini into short lengths like rigatoni or macaroni pasta if you don’t have a spiralizer and still want to make your own zucchini pasta at home. Ready in: 30 min Serving: 4

Ingredients:

  • 6 medium zucchini, spiralized or short cut
  • 20 colossal shrimps, peeled and deveined
  • 3 cloves garlic, minced
  • 5 fresh medium tomatoes, puréed
  • 1 medium sweet onion, puréed
  • 4 Tbsp vegetable oil (for tomato sauce)
  • 3 Tbsp vegetable oil (for shrimps and noodles)
  • black ground pepper
  • garlic powder
  • salt

Steps:

  1. Put a pot over a medium heat.
  2. Add oil and wait a min.
  3. Pour tomatoes purée, onion purée and let cook for 10 min, stirring occasionally to avoid sticking.
  4. Add a generous pinch of ground pepper and garlic powder.
  5. Add salt to taste.
  6. Stir and let cook over a medium-low heat for another 10 min.
  7. Remove the pot from the heat and set aside.
  8. Put a skillet on the heat and turn it back to medium.
  9. Pour in oil and wait until hot
  10. Add shrimps and sprinkle with pepper and salt.
  11. Add minced garlic.
  12. Cook 2 min on each side, or until the shrimps turn pink. Do not overcook them, or they will be tough.
  13. Add noodles and sprinkle with salt. Make sure you still have some oil in your skillet, otherwise, add another Tbsp before you add the noodles.
  14. Sauter noodles for 2 min, stirring
  15. Pour in a pasta bowl and serve with the tomato sauce and Parmesan cheese for an ultimate pasta flavor!
