Amala, another fufu type. It is a dough, very popular in West Africa and can be found under a different name depending on the country (Telibo, Amala, Pate noire, etc.). It is made of dried yam flour and no matter its name, it is delicious served with okra soup.

Ingredients:
- 3½ cups water
- 2 cups dried yam flour
Steps:
- In a large pan, boil 2 cups of water over a medium heat.
- Mix 1 cup of yam flour and 1½ cup of water together.
- Slowly pour mixture into boiling water, stirring with a wooden spatula to prevent clumping.
- Continue stirring as the mixture thickens, 2 to 3 minutes.
- Cover and let it cook for 5 min.
- Reduce heat to low and remove the cover.
- Sprinkle 1 cup of yam flour into the mixture, half at a time.
- Stir with the spatula each time to completely blend it in.
- Wet top with ¼ cup of water and turn the heat back to medium-low
- Cover and let cook for 15 min.
- Stir one last time with the spatula until smooth and elastic.
- Serve with your favorite sauce.
