oven roasted sweet potatoes

  • 2 sweet potatoes (medium size)
  • salt
  • pepper
  • olive oil


  1. Preheat oven to 380º F
  2. Peel sweet potatoes
  3. Slice them (about ½ inches thick)
  4. Wash and dry potatoes slices with cool water
  5. Lay them on a single layer on a baking pan
  6. Sprinkle salt, black pepper on each side
  7. Drizzle with olive oil
  8. Bake at 380º F for 20-25 min until tender
  9. Serve it hot or warm as a side dish
