A super hearty and comforting vegetable beef soup to warm you up these cold days!

Ingredients:
- 1 1/2 lb beef stew meat
- 1/4 cup vegetable oil
- creole seasoning salt
- 1/4 tsp cayenne pepper
- 2 cloves garlic, diced
- 1 medium onion, diced
- 1 cup peeled, diced baby carrots
- salt to taste
- 1/2 tsp black pepper
- 1/4 tsp ginger powder
- 3 medium fresh tomatoes, diced
- 1/4 tomato sauce
- 2 jalapeño peppers
- 1/2 tsp dried thyme
- 4 cups water
- 2 medium potatoes, peeled and diced
- 2 dried bay leaves
- 1 cup frozen peas
Steps:
- Clean and season meat with salt, pepper, creole seasoning salt
- Heat oil in a pot over medium high heat for 30 s
- Add meat in pot and brown for 10 min
- Reduce heat to medium low, add garlic, onion, and carrots, and sauté for 5 min
- Add fresh tomatoes and tomato sauce
- Add seasoning salt, ginger powder, cayenne pepper, and thyme
- Pour in water, add bay leaves and stir
- Cover the soup and simmer for 25 min
- Add potatoes with a pinch of salt and simmer for another 15 min
- Add sweet peas and jalapeño pepper, and simmer for 15 min
- Serve hot
