Ingredients:
- 2 tilapia (scaled and sliced into 4 pieces)
- 2 cups tomato sauce
- ½cup onion puree
- ½ cup vegetable oil
- 4 cups water
- ½ tsp salt
- salt, pepper, ginger, garlic for fish seasoning
- 4 green scotch bonnet peppers (cleaned)(optional)
- ¼ cup onion (thinly sliced lengthwise) (optional)
Steps:
- Clean fish with cool water
- Put tilapia pieces on a plate
- Generously sprinkle salt, pepper, ginger, and garlic on each side and between every corner of tilapia pieces (about ¼ tsp of each spice)
- Set it aside for at least an hour
- Put a pan on a medium heat until high
- Pour in oil
- Add tomato sauce, onion puree
- Cook for 15 min stirring occasionally to avoid sticking
- Add ½ tsp salt and water
- Cook 20min on medium heat
- Carefully add fish one after another
- Cover and cook on medium-low heat for 15 min
- Add a handful of sliced onion and scotch bonnets and cook for another 5 min.
Tip: The fish taste excellent when marinated overnight.
