Fresh Tilapia Tomato Sauce

Ingredients:

  • 2 tilapia (scaled and sliced into 4 pieces)
  • 2 cups tomato sauce
  • ½cup onion puree
  • ½ cup vegetable oil
  • 4 cups water
  • ½ tsp salt
  • salt, pepper, ginger, garlic for fish seasoning
  • 4 green scotch bonnet peppers (cleaned)(optional)
  • ¼ cup onion (thinly sliced lengthwise) (optional)

Steps:

  1. Clean fish with cool water
  2. Put tilapia pieces on a plate
  3. Generously sprinkle salt, pepper, ginger, and garlic on each side and between every corner of tilapia pieces (about ¼ tsp of each spice)
  4. Set it aside for at least an hour
  5. Put a pan on a medium heat until high
  6. Pour in oil
  7. Add tomato sauce, onion puree
  8. Cook for 15 min stirring occasionally to avoid sticking
  9. Add ½ tsp salt and water
  10. Cook 20min on medium heat
  11. Carefully add fish one after another
  12. Cover and cook on medium-low heat for 15 min
  13. Add a handful of sliced onion and scotch bonnets and cook for another 5 min.

Tip: The fish taste excellent when marinated overnight.
