  3. Put it in a large pan with all spices, ½ cup onion, and 6 cups of water

  1. Meanwhile, mix 1 ½ cup of corn flour with 3 cups of water, and set aside.
  2. Put a pan on a medium heat and add ¼ oil.
  3. Add tomato sauce, onion sauce, a pinch of ground pepper, cover, and let cook for 5 min, stirring occasionally.

  7. Pour in 1 ¾ cup of turkey broth, cover, and let it boil for about 10 min.
  8. Remove the cover, pour in the corn mixture stirring with a wooden spatula to prevent clumping.
  9. Continue stirring as the mixture thickens, 4 to 5 minutes.
  10. Reduce heat to low and cover the pan, let amiwo cook for 10 min.
  11. Remove cover, stir with spatula one last time. The amiwo should be thick, not too thick, not too soft.

  13. Cover and let it rest for at least 30 min.

Serve Amiwo with baked turkey with Tomato and Onion sauce, and a little hot pepper puree for some heat.

Bon appetit!
