Ingredients:
- 6 medium zucchini, spiralized or short cut
- 20 colossal shrimps, peeled and deveined
- 3 cloves garlic, minced
- 5 fresh medium tomatoes, puréed
- 1 medium sweet onion, puréed
- 4 Tbsp vegetable oil (for tomato sauce)
- 3 Tbsp vegetable oil (for shrimps and noodles)
- black ground pepper
- garlic powder
- salt
Steps:
- Put a pot over a medium heat.
- Add oil and wait a min.
- Pour tomatoes purée, onion purée and let cook for 10 min, stirring occasionally to avoid sticking.
- Add a generous pinch of ground pepper and garlic powder.
- Add salt to taste.
- Stir and let cook over a medium-low heat for another 10 min.
- Remove the pot from the heat and set aside.
- Put a skillet on the heat and turn it back to medium.
- Pour in oil and wait until hot
- Add shrimps and sprinkle with pepper and salt.
- Add minced garlic.
- Cook 2 min on each side, or until the shrimps turn pink. Do not overcook them, or they will be tough.
- Add noodles and sprinkle with salt. Make sure you still have some oil in your skillet, otherwise, add another Tbsp before you add the noodles.
- Sauter noodles for 2 min, stirring
- Pour in a pasta bowl and serve with the tomato sauce and Parmesan cheese for an ultimate pasta flavor!
